    Butchery Class: How to Branzino

Butchering isn’t all about red meat, which is why Chef Liam LaCivita wants to explore the famous Italian sea bass, Branzino! We are excited to be leading this Butchery class that is dedicated to three unique ways to butcher and prepare Branzino! We will be showcasing how to create the Whole Branzino in Salt, Poached Branzino and Sauteed Branzino. Join in as we teach the secrets to preparing the perfect pates of Branzino, and if you dare, you will even be able to try your hands at it! The butchering demonstration will be followed by a tasting of some of our handiwork, so don’t miss out and buy your tickets today!

ABOUT OUR CLASSES

Our Classes and Demos are a unique social, culinary and educational experience that take place with our Chef, Butcher or Mixologist. The classes will vary in size depending on the type of class and the space in which we are hosting but we strive to provide the best experience possible for our guests. Admission is $35 and will include tasting of the product you are learning to make, while additional wine or food may be purchased from the cafe or wine cellar.  


Our Classes and Demos typically begin at 7:30pm unless otherwise listed and guests are encouraged to arrive a few minutes ahead of time to allow for check-in. All guests planning to consume alcohol must have valid government-issued identification. Menus are subject to slight change due to market availability. A vegetarian option may be substituted upon sufficient notice.

Why Tickets?

All of our events are ticketed events with limited seating. Tickets are purchased in advance, on a first-come first-served basis until sold out. Events at Via Umbria are unique experiences that are carefully crafted to create an outstanding and memorable dynamic. By requiring pre-purchase of tickets, we minimize the frequency of no-shows and ensure that we create the best possible experience at the best possible price for what we offer. 


Each month’s tickets are offered for sale all at once, through our monthly event calendar, which is typically posted at least a month in advance. Event buyouts and private events are also possible. Please contact us if you are interested in more information. 


Tickets are not refundable and cannot be exchanged for a different date or time, but they are transferable to other people. Think of it like buying a ticket to a concert, baseball game, or movie. Ticket prices do not include a 10% DC Meals Tax, which will be added to your purchase, or gratuity, which is at your discretion.
