POSITION - Head Chef

We are seeking a talented, passionate and experienced chef to lead our culinary team. Our committed owners and passionate team members have created a culture dedicated to using food to create experiences that build community. The qualified candidate will have an opportunity to work with the team to shape, develop and expand the program in a rewarding environment that provides an unmatched outlet for creativity and entrepreneurialism. Opportunities will be frequent for meaningful interactions with customers - in our demo kitchen, cafe, retail space and through cooking classes and special events - as well as TV and other media opportunities.

ROLE
The chef is responsible for leading the culinary team and ensuring daily production of authentic Italian food tor our cafe, dinners, special events and offsite catering. The chef will report to the owners and work with management colleagues to continually evaluate and upgrade the program and to pursue targeted opportunities for growth. The chef will have a strong background in Italian cuisine, with a demonstrated passion for simplicity, tradition and authenticity but with an interest in modern approaches and twists. Management of the kitchen includes ordering, costing and scheduling as well as working closely with our butcher/cheese/market managers, cafe, retail and events managers to achieve overall business goals.

DUTIES
  • Plan and modify weekly menus with owners and managers to meet various requirements (overall business objectives, seasonal availability, visiting chefs or producers)
  • Develop standard recipes and techniques for food preparation and presentation to assure consistency, high quality and to minimize food costs; assist in establishing menu selling prices
  • Oversee and train kitchen staff, including scheduling and handling interpersonal issues
  • Work with managers to place food orders and manage relationships with food vendors
  • Evaluate food products and establish controls to minimize food and supply waste
 
QUALIFICATIONS
  • Extensive knowledge of regional Italian cuisine and experience preparing it in restaurant setting
  • Ability to produce a high volume of work in a timely manner, which is accurate, complete, and of high quality
  • Flexibility and adaptability to plan and modify menus to meet changing requirements
  • Excellent time management skills
