If you want to truly understand what it is like to be Umbrian, join us as we welcome the husband-wife team of Jennifer McIlvaine and Federico Bibi to Via Umbria for two wonderful weeks. Philadelphia born chef Jennifer McIlvaine moved to Italy over a decade ago to learn the essence of la cucina italiana, opening and operating a successful restaurant in Foligno while settling down with her Italian husband, winemaker Federico Bibi. The couple live and breathe Umbria and their love for sharing the things that make Umbria special is why we have developed such a deep bond of respect and affection. The couple joins us again this winter for two weeks of wine tastings, cooking classes and dinners where you can get to know them and begin to feel the magic of Umbria that animates their lives.

Taste Wine with Federico
Federico Bibi manages Umbria's Terre Margaritelli winery, producer of DOC and DOCG Torgiano wines whose signature is organic/sustainable farming practices, wines of character and clean, fresh wines that are super food friendly and easy to drink. Spend a relaxed evening with Federico learning about his winery's history, his approach to winemaking and tasting great wines with a big personality who is a one-man chamber of commerce for Umbria. Each wine will be paired with a taste prepared by Federico's chef-wife Jennifer McIlvaine. A lunch and visit to Federico's winery is always a highllight of our Umbria Food & Wine Tours. Cook with Jennifer
Chef Jennifer McIlvaine is a translator, of sorts. She is able to take the indescribable essence of Italian cooking and describe it to Americans. This is a rare opportunity to spend time in the kitchen with Jennifer and learn not just classic Umbrian recipes, but to really get into the mind of the Umbrian chef. This demonstration cooking class includes some hands on activities and one-on-one interaction with the chef. Afterwards, participants will retire to the table for a four course dinner with Jennifer and Federico.
Dinners at the Chef's Table
For three special nights in December Jennifer will be preparing extraordinary four course dinners paired with Federico's wines. Thursday and Friday's dinners (Dec. 28 and 29) will be truly unique - medieval menus featuring recipes from Umbria's distant past. Saturday's dinner (Dec. 30) will highlight classic Umbrian fare. Each dinner will be paired with Federico's Terre Margaritelli wines, from the tantalizing Venturosa rose to the finessed Greco di Renabianca grechetto to his easy drinking Malot, Mirantico and Roccascossa reds to the haunting Freccia degli Scacchi Rosso di Torgiano Riserva DOCG.
