A biodynamic winemaker shares how the earth naturally makes the best wine. Roberto DiFilippo is a half hour walk from our Farmhouse in Umbria, and it was a treat to have him in the United States for this five course dinner paired with three of his classic wines.
Roberto uses geese instead of pesticides, and harvests with horses instead of tractors, both part of being a biodynamic and organic farmer. His three star wines were paired with classic Umbrian dishes for a night to remember.
